Perfect gluten-free gingerbread cookies are a quintessential part of any (gluten-free) holiday. Spicy, crisp, sweet-but-not-too-sweet treats just make the house feel perfectly wintery. In fact, you can make the house feel wintery all month long. The dough keeps very well sealed in a zip-top plastic bag in the fridge (assuming you can keep *ahem* curious fingers out of it). Last year, we made a double batch at the beginning of December and literally kept baking cookies clear through till Christmas. If you make the dough with real egg instead of a flax egg, note that its refrigerator life decreases to a week or less. I don’t know what to say about these ice pops. Booze + berries + dark chocolate. I feel like I could just end the blog post there and be all like, “Mic. Drop.” And that would be good enough. Because, seriously. Homemade Popsicles are nice, but if you use super juicy fruits they tend to get icy. Enter: booze. Just a bit of wine (not enough to make you tipsy, sorry) softens up these pops to the perfect nibbleable consistency. It only requires a cup of wine, so it’s a great way to use up the bit leftover from that dinner party or from making a pot of red wine marinara sauce or whatever. I made these with strawberries frozen from our summer haul, but I have it in good faith that these would be equally good with the raspberries and blackberries right at the end of their season right now. Oh my gosh. This cucumber salad. It came about from another one of my “well, I need to use up the things before they go bad” phenomenons. The contenders: cucumber, mint, and also tahini because for some reason I wanted something vaguely Mediterranean. But this recipe took me a solid three tries to finally get right. FOR A SALAD, YOU GUYS. Seriously. Mostly, the problem was that I was stubborn and didn’t really want to follow the recipe... In all seriousness: do follow the directions on the dressing carefully, especially the bit with adding the water. It works some kind of magic with the tahini, turning it into an emulsion sort of the same way that oil and egg become mayonnaise, or the way that water and butter become whipped butter. When I started my journey of clean-eating, I compiled a wish list of ALLLL THE BAKED GOODS that I needed to figure out how to replicate, namely: cake, pie, cookies, biscuits, and BREAD.
