I love that they’re an allergy-friendly indulgence that contains only one teaspoon of honey per muffin. They got the thumbs-up from the three sets of company I fed them to*. When I started my journey of clean-eating, I compiled a wish list of ALLLL THE BAKED GOODS that I needed to figure out how to replicate, namely: cake, pie, cookies, biscuits, and BREAD. Real, honest-to-goodness bread. I had tried a few gluten-free breads that friends had made, but most of them were too crumbly to hold up to smearing with butter or jam, or they left my teeth feeling weird because of all the xanthan gum. Okay guys, I’m going to be real. This recipe is a little weird. It has nutritional yeast in it. Any recipe that calls for an ingredient that looks and smells like fish food should just be off the menu. I avoided buying it for the longest time on that principle alone. I confess: I have a little bit of a love affair with sweet potatoes. It made me wonder: why on earth would one need baking powder AND baking soda in the cabinet? What was the difference? What kind of conspiracy was this? WHY WAS THIS SUCH A MYSTERY TO 9-YEAR-OLD SERENA? Banana bread is something special to me. Growing up, my brother Chris would always jump on the chance to make it anytime there was a bunch of bananas growing speckly on the counter—and then would gloat about the number of bananas in it, for some reason (“I put SEVEN bananas in this one”). We would bake in a big cake pan til it was all caramelized on the edges and then fight over the coveted middle piece and eat massive pieces of it warm, sprinkled with an avalanche of powdered sugar. Bliss. One time, Chris misread the recipe and put in two cups of baking powder rather than two teaspoons (because yes, we had the Costco-sized tub of it in the house). Panicked at the sight of the rapidly rising batter, he called my mom to the kitchen. She quickly realized his error, and the impending fate of the banana bread… So she put the bowl in the sink to watch the batter ooze up and over the sides of the bowl, calling it a science project.
