Paleo Ranch Seasoning Mix (dairy-free)

Paleo Ranch Seasoning Mix (dairy-free)

Once upon a Whole30 adventure, we had all too much homemade mayo to use up. And also some raw veggies. It was obvious what needed to be done: homemade ranch dressing. A quick Google search, and we were well on our way.   In my pre-paleo days, I’d just use the ranch spice blend from Costco, but *gasp*: dairy! MSG! soy! It’s nice to have an option that is every bit as flavorful, but not one bit tummy ache-inducing. This spice blend is equally good used as a seasoning for roasted veggies, stirred into rice pilaf (David’s favorite), or used in a meat marinade. Of course, if you want to keep it classic turn it into ranch dip (and you should), mix a couple of teaspoons (more or less) into your homemade mayo, eat, drink, and be merry. You can add other spices to this blend as you see fit (for instance, dill would be pretty good here), but this suits our palates just fine. READ MORE

No-fail Homemade Mayo (paleo, keto)

No-fail Homemade Mayo (paleo, keto)

Homemade mayo is a dream come true. No lie. I’m not even that much of a mayo person, but David is, so I made him some during a fling we had with Whole30. Whole30 only lasted a week before we broke up, because SOMEBODY felt the need to finish up the Klondike bars in the freezer. But the mayo stayed. I think we got the better end of the deal. An egg, some olive oil, mustard, and a bit of salt emulsify through some sort of magic—and make you feel like a total kitchen boss. When you utter the words, “Yeah, I made this mayonnaise from scratch,” your kitchen street cred goes up a full ten points, I swear. We like the texture of it when it’s hand-whipped (it’s not as hard as people say, honest!), but it will come together more quickly with an immersion blender if that’s your jam. Either way, it’s delicious. READ MORE

Preserved Lemons

Preserved Lemons

I’m sorry to say that I’ve gone down the rabbit hole of fermentation. Sauerkraut, kombucha, ginger beer… Not sure if it’s the hard-core DIYer in me, or the “OMG I can make practically free probiotics” appeal. Hm. Maybe I have a problem. These strange preserved lemons are my latest problem, I guess. A delicious problem. Their flavor is unusual, but bright and happy and somehow less sour, but more lemony. To be honest, I more or less just made them to see if I could. The recipe author writes of them so romantically that I couldn’t help but put together a jar. READ MORE

Quick-Pickled Red Onions

Quick-Pickled Red Onions

A few months ago, I used up a jar of jalapeños and used the juices to make a jar of the most delicious pickled carrot sticks ever. I got to wondering: what else can I pickle? A google search quickly determined red onions were destined to be the next victim. They promised to be the perfect condiment for an upcoming taco night, so I made a jar. They were so easy to make and so perfectly delicious that I decided that they ought to become a permanent feature in my fridge. They’re tart and crisp and savory and pretty all at once. I love tossing them over salad, tucking them into spring rolls, or putting the jar out with a spread of taco or burger fixings. Their flavor is so bright and happy, I can’t help myself. READ MORE

Paleo Sweet Potato Hummus

Paleo Sweet Potato Hummus

Even before I ever made any dietary changes, I started getting hints that my body needed a break. I had to start giving up foods because they were making me sick. First beans, then lentils, hummus, green beans, and finally, peanut butter. Even my dearly beloved peanut butter. Of course, then I went paleo, and those foods were out the window anyway, but I had to figure out a way to make a substitute for them! I tried almond butter and sunflower seed butter to replace peanut butter, but that was a no-go. My strong reactions to beans and lentils left me too scared to try them again, so no experimentation necessary there. But hummus? I thought maybe I could find something… READ MORE

Whipped Butter

Whipped Butter

A few weeks ago, I was taking out some butter to soften and serve with homemade biscuits. I was looking for a vessel to put it in, and remembered these cute little swing-top jars I got at Ikea. But oh, it would get hard when I returned it to the fridge later, and then it would be too difficult to get out…but what if I whipped it? Could I whip it? Turns out, the answer is yes. This was dangerous news. I now want whipped butter on everything. READ MORE

Simple Balsamic Vinaigrette

Simple Balsamic Vinaigrette

Thanksgiving of 2016 was our first turkey day as a married couple. Since we were living in Arizona at the time, we celebrated with David’s sister, Danielle, and her husband Franky. It was quite the spread of paleo delights. With all the heavy dishes of sweet potatoes and turkey and gravy and such, we deemed it necessary to include a salad. Danielle mixed up a balsamic vinaigrette all quick-like and poured it over some greens and that was that.   At dinner, David and I tasted the salad and were like, “WHAT IS THIS? Why is it so good?” Danielle pointed the bottle she had mixed it up the vinaigrette in: there were recipes printed on the side. Cheating. (You can get that bottle here, by the way. We have one. Quite a handy little thing.) I took the bottle’s version and modified it a little for our tastes, til it was juuuust right.   READ MORE
